  • Harvest is carried on in September and than the grapes enter a process of natural drying that lasts 6 month
  • In mid April or even end of April the grapes are processed and the very thick juice remains in steel for two months before being aged for 12 years in small barrels oak - caratelli - together with some mother yeast
  • In the glass: deep ruby color, very viscose and thick
  • On the nose: very complex and intense, it is a concentrated sweet wine expressing notes of honey but essentially debating between walnut and tamarind with a dense creamy feeling
  • In the mouth: extreme in all its aspect, density, concentration, maturity and sweetness; of great balance and neverending finish
  • Finish: extremely persistent it leaves a delicate sweetness of hazelnuts and chocolate
  • First production year: 2007

Between walnut and tamarind, this is the debate of the Vin Santo Occio di Pernice 2007. Extreme in all of its aspects: density, concentration, maturity and sweetness. It's difficult to say how and when to drink it, but you need to try it.
